Roulade

MATERIALS NEEDED

Sugar 275gms (Sugar: 100gms to mix white

Sugar: 175 to mix yoke)

Cornstarch 175gms

Plain flour 200gms

Eggs x 11 small

Fat- 20gms( greasing the baking tray)

A little flour for dusting

EQUIPMENT

Baking tray(I use extendable)

Towel

Mixing bowl

Sieve

Electric mixer

Palette knife

Parchment baking paper

Whisk

FILLING

double cream 120gms

sugar 20gms or fruit jam

strawberries x6- chopped

INSTRUCTIONS

1: Heat oven 150 degree Celsius- moderate heat, sieve flour and cornstarch,

together in a bowl and mix with a whisk.

2: Separate egg white from egg yoke (put in separate bowls).

3: Add 175gm of sugar to the egg yolk and whisk until colour changes from yellow to cream.

4: With a folding method/ technique add the mixed flour and cornstarch to the yoke

( use the palette knife for folding in the flour). Mixture might be thick.

5: whisk the egg white until it has soft white snow peaks and then add the sugar. continue whisking.

6: Add the stiff egg white in sections, (could be divided into two “2” parts), to the egg yolk mixture

and fold in, with the palette knife. Continue folding the egg whites into the yolk mixture

until the mixture is soften and kind of a pouring consistency.

7:Adjust the baking tray to the size of the oven, grease the baking tray with fat.

Place the parchment paper on the greased baking tray and cut excess parchment paper.

(this enables the parchment to stick to the baking tray).

8: Grease the parchment paper with a little fat  and then dust a little flour over the greased parchment.

Tap the baking tray to remove, excess flour.

9: Pour the mixture into the greased baking parchment and place in the oven- middle layer. Bake until

skewer comes out clean. (sometimes 10-15 minutes or more).

10: when the cake is ready, remove from  the oven.

11:  Turn-out the cake on the towel. Remove the baking pan and parchment paper.

12: Roll the cake and towel together as illustrated in the pictures below.

13: Mix the double cream and add sugar to taste.

Lie the sponge cake flat and remove the towel. Spread the mixed double cream on the sponge cake.

Add chopped strawberries.Roll the sponge into a cylindrical shape.
